Time and Tides

Corb and have a pet list of perfect meals that we have enjoyed. There is a dinner at the Fountainbleu that we count on that list, along with a meal or two at our favorite French restaurant, Pot au Feu in Providence. I think our meal at Tides in Barbados probably is on that list now, too.
Renee arrived right on time for our dinner (5:15) and we arrived at six for our reservation. "These two are special to me," she said to the attendant as she dropped us off. "Please make sure they are treated well."
We were escorted to a table with an absolutely stunning view of the Atlantic ocean. You could practically jump into the water if you wanted.

After we we were seated, we started our dinner with a few drinks. Joined joined the martini club with a Toasted Caramel Sugar Cake, which is something of a house specialty. I ordered a strawberry and basil martini. Corb loved his drink so much that he ordered three, and true to form, the lovely staff left the bartender know how much Corb enjoyed it and personally dropped by to tell Corb how to make it at home.

After that, our first course. I chose a lovely beet salad. Corb's order looked delicious, but when I asked for a bite, his plate spelled out his answer.


My main course was a miso blackened Scottish salmon filet. Even with a return to better dining, I am still trying to eat somewhat sensibly. It was perfect, just melted in the mouth. (Note: the photo isn't great, however)

Finally, dinner was capped off with passion fruit bavorois and an espresso. You can tell that I started to break the side before I took the photo. Well look, it was just too tempting, I couldn't help myself.

End result? With its simple but beautiful design, impressive white columns and beautiful artwork everywhere, along with a breathtaking view, Tides has a visual splendor that is well matched by its culinary agility. I doubt we will get a better meal anywhere while on the remainder of this trip. Once in a lifetime.
